(yes, I know, I could doubtless make at least two meals out of what's in the house, but my Sweetie has a sore throat and a cough and to make him something comforty, I'll fight all the crowds in all the grocery stores on all the Saturdays in the world.)
Saturday: Broccoli, white bean and cheddar soup tonight- and easy fix after a busy day. Catch the neat trick of getting a creamy consistency without the fat & calories of cream by pureeing half of the soup!

Sunday: The crock pot comes out today, and stays out for the rest of the week. Chicken Chili tonight! The chicken breast cooks in the chili; cook two extra pieces of chicken breast, we'll use them in soup on Tuesday. A couple of notes: I really dislike the taste of MSG, so I usually reach for the low sodium chicken broth option, and double check the label to make sure there's none in there. Cans of chicken broth are on sale in Charlotte, and boxes here. And because of the MSG thing, I may opt to stir up a quick white sauce instead of using canned cream of chicken. With any luck though, a little label reading in the natural food section will help me take the easier way out of that.

Monday: Corned beef for the first time since last winter! This is another easy peasy slow cooker recipe- it calls for beer, but you can get great results with apple juice too. Don't worry about the leftovers- Reuben sandwiches on the roster for Wednesday! yum!

Tuesday: Shred the extra chicken you cooked on Sunday, and use it in this simple chicken soup. The recipe calls for egg noodles, but I may go to the latin food section for those teeny straight noodles- the kind I remember from the packets of lipton chicken noodle soup mix. Or I may use tortellini. or maybe even rice! Thank you, soup, for being so versatile

Wednesday: Grilled Reuben sandwiches! If you've never had them, give them a try- take a nice slice of a sturdy rye bread (i like the kind without caraway seeds) lay on a slice of swiss cheese, a few thin slices of leftover corned beef, some sauerkraut and some thousand island dressing. (A big shout out to the cook who taught me to mix the dressing with the drained kraut. Don't know why, but it's one of those tricks that makes the whole sandwich fantasticker.) grill it until the cheese is melty and indulge yourself by opening a bag of potato chips. sigh. life is good.
if you hate the idea of a Rueben and have corned beef leftover, search for a nice corned beef hash recipe- also yummy.
Thursday: $5 something a pound may not seem like much of a sale, but that's the cost of NY strip steak this week in charlotte and Dallas. I've decided that it's worth a try, because i love the look of this recipe:
Friday: I was going to advise buying enough steak to make these lovely sounding grillades with the leftovers, but my frugal soul recoiled at the idea. But... I think that the sale price is only good on the "value size" so, if you decide that you can afford that kind of "value", and you end up with leftovers, this recipe looks great:
