Did I mention that I hope to update you on Sunday about what's working (and more often NOT working) with the week's menus?
No?
Well, expect it. Unless of course, there's a new Miss Marple or Sherlock on PBS. But, since the best TV on tonight is a recording of the closing ceremonies.....
First, the fritatta.
The addition of yogurt! Brilliant! A much more quiche-like texture. It did, however, look a little anemic, and had to spend a few minutes in the tanning booth (aka under the broiler) to come out looking like this:
A toasty, tasty pan-o-protein
And now for the salmon...
errr, well.
ok, so first- here's a pic of the salmon cooking in a mix of wine, lemon juice and olive oil. I took it so that you'd see about how far up the piece of fish the liquid should come:
See that seasoning on top? A misguided experiment in culinary creativity. It's a mix of garlic powder, chili powder, salt and sugar. So amazing on pork or burgers or chicken breast.
So, so, wrong on salmon.
At least I thought so. The home audience disagreed, but he's a little too uncritical (bless him forever) to be trusted. The seasonings, I thought, really overpowered the salmon, and threw a serious kink in my plans to use the leftover fish (that salty, chilified fish) in a nice, delicate, pasta & cream sauce thing.
Wait! Let's check the fridge! Look closely. Look very closely:
Do you see what I see?
(No, not the Waldos. though there are 9. I think)
Cause...I see fish tacos. Pretty good ones, I'll bet.
So, that's fish tacos instead of pasta and cream sauce. Leftover rescue mission (hopefully) accomplished..
Expect new menus on Wednesday- Any suggestions?
