weekend update, August 26

" an adventure is only an inconvenience rightly considered"
That's a wonderfully fun bit of wisdom from a wonderfully fun writer, G.K. Chesterton. (pop his name in the search bar at quoteland.com and count how many quotes before you're smiling. Better yet, read a Father Brown mystery) For years those words, painted in blue scrolling letters, stood sentry at the entrance of our kitchen. They welcomed everyone who entered, and I hope, gave them a little warning about what they might be in for if they persisted in hanging out at our place.
Memorize them, and you'll be surprised how often they'll come to mind. (Or, maybe you won't be surprised at all)
I neither planned nor posted nor cooked this week, as we've been having an, er... adventure in Lubbock, Texas.
Now, usually I relish trips like this- it means we eat out, and that means I get heaps of inspiring ideas.
Except this is Lubbock. Where the food is nearly as unique and interesting and imaginative as the architecture:

An inspiring discovery today though! Lettuce wraps at Jimmie Johns! it's a sandwich! but it's wrapped in lettuce instead of a tortilla! yummy, fun and gluten free.
Hands up if you're thinking..."welllll....isn't that pretty much just a burrito shaped....salad?"
now put your hands down and be quiet. because of course you're right, but that doesn't mean I can't get happy about a fun new way to have a salad.
                                    let's try this at home!
And...I've had the unusual opportunity to watch CABLE TELEVISION- and I didn't have to watch long to wish that the food on diners, drive-ins and dives didn't look so yummy. Cause those recipes are not on speaking terms with low-cholesterol recipes.
 I was a little chagrined, after an episode that featured a burger stuffed with fall-apart-tender brisket, to realize that I have not cooked a brisket all summer long! And I live in TEXAS! Oh the shame! (more on that later...) 
 If this Lubbock adventure ends as scheduled, I'll be in our own home by midweek, ready to eat a little slow food. Not difficult food, but not fast food either. Here are the ideas I'm looking forward to trying:
I'm going to lead off with chicken-

then, I'm going to use some fish that's been hanging out in the freezer for awhile. There's a twofer bonus with this recipe; it also uses up a couple of potatoes that need to leave the pantry. (the recipe calls for red potatoes- but you know me better than to think that I'm going to buy red potatoes when there's a pound of yukon golds in the pantry)

and then maybe, just maybe, I'll buy a brisket, and do this

and the next day, turn the leftovers into the star of a taco salad so nice, it'll make me happy that filling the house with the smell of roasting brisket is even nicer in the fall than it is in the summer.
