Lubbock, you have the strangest assortment of not very yummy sounding things on sale I've ever seen, but once again, peaches and pears are on sale all over the place.

Friday: I had fish tacos posted for this day, and that still sounds like a good idea- Lubbock, you have cabbage on sale if you like fish tacos with cabbage instead of lettuce.
Saturday: Lovely russet potatoes on sale in Charlotte, and they're not too expensive anywhere else. Let's have loaded baked potatoes for a simple Saturday dinner ( did I hear someone say bacon?!!) bake at least 3 extra potatoes, we'll be using them later in the week. Make my green veggie loving heart happy by topping at least part of your potato with some steamed or microwaved broccoli, okay?
Sunday: Ah! red sauce my friend, autumn and I welcome you back to the kitchen. The holy grail of red sauces for me is a simple mix of canned san marzano tomatoes, onion and butter. I first tried it years ago when it showed up in a nice little novel I was reading. The novel I have forgotten, the red sauce is my friend forever. Here's a link to an actual recipe- this is so forgiving, you can easily flex on ingredient proportions. I sometimes tip in any leftover red wine before it starts the simmer. For tonight, pair this with sauteed veg (zuchinni, onion, tomato, mushroom, bell pepper- they're all on sale) and your fave pasta shape. Don't worry if you've made too much sauce, we're using the leftovers Tuesday.

Monday: Take those leftover baked potatoes out of the fridge, split them in half lengthwise, and scoop out the insides for potato soup. Save the skins! we'll be using them on Wednesday. All of us have a nice deli ham on sale, so what about making a yummy grilled ham and cheese sandwich while the soup simmers.
Tuesday: Pull the leftover red sauce from the fridge, pour in your favorite beef or vegetable broth, and add some chopped vegetables (fresh or frozen mushrooms, zuchinni, green beans. if you've leftover veg from Sunday, throw it in.). and a can of drained and rinsed navy or canelli beans. There. you just made ministrone.
I usually cook up some tortelli in a separate pot, and put the pasta and the soup together at the last minute. The pasta seems to go a little less mushy that way. A nice crusty loaf of bread, and you've got dinner.

Wednesday: I happen to know that on Wednesday, we'll be going out to dinner with some of our dearest friends. I think everyone else should do the same. Except of course, the people who are cooking whatever dinner you and your friends are going out to eat.
If you're not planning on going out with friends, how about having some friends over? Here's a great line up for them: Oven fried chicken, potato skins and a roasted butternut squash salad.
you'll have the oven on for the chicken and squash, so take those potato skins out, spray them with an olive or canola oil spray, sprinkle them with cheese and salt and pop them in the oven for 15-20 minutes. yum!

Thursday: Did you really do all that cooking yesterday?! you deserve a break! Make some omelets with any leftover ham and cheese and vegetables you have. Want to get a little more ambitious? I'm passing along a link to some of the best biscuits in the world.

Friday: Butternut squash on sale in Charlotte, and winter squash of all sorts on sale in Dallas too. Time for one of my faves- butternut squash soup! Pair this with a nice salad- lettuce with pears, avacado, shaved parmesan and a rosemary vinegrette would be lovely.
